The pistachio is a dried fruit produced by a shrub that grows 3 to 10 meters tall. Cultivated 3,000 to 4,000 years ago in the Middle East, it was later exported and cultivated in Mediterranean areas. The fruit is widely used in food, often roasted as an aperitif but also sweetened or plain in pastries. The pistachio's typical sweet flavors and almond notes are also highly appreciated in beverages.
